Chiri Uchu is considered the flagship traditional dish of Cusco. Etymologically, Chiri Uchu derives from two Quechua words, Chiri = Cold and Uchu = Food, and can be translated as “Cold Food.” This dish has a mix of flavors from the coast, highlands, and jungle, originating from the time of the Incas, in the Tahuantinsuyo.
The ingredients used for its preparation include toasted white corn, cheese, guinea pig, chicken, jerky, seaweed, fish roe, and rocoto. This delicious Cusco dish can be enjoyed at any time of the year, but the traditional date to savor it is during Corpus Christi.
Chicharrón is one of the most sought-after and consumed typical dishes by tourists when they visit Cusco, especially by the locals. The dish consists of a portion of pork cooked in its own oil, accompanied by hominy, French fries, and its indispensable salad. It is optional to consume spicy chili.
